Northbridge Recipe – Stuffed Turkey Casserole

Ingredients:
Turkey Layer:
- 10 lbs ground turkey
- 2 tbsp olive oil
- 2 large onions, diced
- 4 celery stalks, diced
- 3 tbsp garlic, minced
- 2 tbsp poultry seasoning
- 1 tbsp dried sage
- 2 cups dried cranberries
- Salt and pepper to taste
Stuffing Layer:
- 2 loaved day old bread, cubed
- 2 large onions, diced, 4 celery stalks, diced
- 6 tbsp butter
- 2 tbsp poultry seasoning
- 1 tsp dried thyme
- 1 tsp dried sage
- Salt and pepper to taste
- 4-6 cups turkey broth (as needed)
1 quart turkey gravy
Instructions:
Prepare stuffing:
- Toast cubed bread in the oven at 300°F until slightly dry.
- In a large pan, melt butter and sauté onions and celery until soft.
- Combine bread, vegetables, and seasonings in a large bowl.
- Gradually add warm chicken broth until moist but not soggy. Set aside.
Cook the turkey mixture:
- Heat olive oil in a large pan.
- Sauté onions and celery until softened, then add garlic.
- Add ground turkey and cook until browned.
- Stir in poultry seasoning, sage, salt, pepper, and dried cranberries.
Assemble:
- Spread turkey mixture evenly into hotel pans or casserole dishes
- Top with an even layer of homemade stuffing
Bake:
- Cover with foil and bake at 350°F for 35–45 minutes until heated through.
Finish:
- Serve with warm gravy over the top or on the side.
