Northbridge Recipe – Stuffed Turkey Casserole

Avita of Stroudwater Culinary Director, Pat Armstrong, shares one of his favorite dishes to prepare and enjoy, Stuffed Turkey Casserole. Inspired by the comforting flavors of Thanksgiving, this hearty dish brings everything together in one, making it both satisfying and especially well-suited for memory care.

Ingredients:
Turkey Layer:
  • 10 lbs ground turkey
  • 2 tbsp olive oil
  • 2 large onions, diced
  • 4 celery stalks, diced
  • 3 tbsp garlic, minced
  • 2 tbsp poultry seasoning
  • 1 tbsp dried sage
  • 2 cups dried cranberries
  • Salt and pepper to taste
Stuffing Layer:
  • 2 loaved day old bread, cubed
  • 2 large onions, diced, 4 celery stalks, diced
  • 6 tbsp butter
  • 2 tbsp poultry seasoning
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • Salt and pepper to taste
  • 4-6 cups turkey broth (as needed)

1 quart turkey gravy

Instructions:

Prepare stuffing:

  • Toast cubed bread in the oven at 300°F until slightly dry.
  • In a large pan, melt butter and sauté onions and celery until soft.
  • Combine bread, vegetables, and seasonings in a large bowl.
  • Gradually add warm chicken broth until moist but not soggy. Set aside.

Cook the turkey mixture:

  • Heat olive oil in a large pan.
  • Sauté onions and celery until softened, then add garlic.
  • Add ground turkey and cook until browned.
  • Stir in poultry seasoning, sage, salt, pepper, and dried cranberries.

Assemble:

  • Spread turkey mixture evenly into hotel pans or casserole dishes
  • Top with an even layer of homemade stuffing

Bake:

  • Cover with foil and bake at 350°F for 35–45 minutes until heated through.

Finish:

  • Serve with warm gravy over the top or on the side.
