Northbridge Recipe – Spinach Berry Salad

Laurentide at Mashpee Commons Culinary Director, Eric Bright, shares one of his favorite dishes to prepare for residents, Spinach Berry Salad. This fresh, vibrant recipe combines simple ingredients with thoughtful preparation, delivering a light yet flavorful dish residents love.
Ingredients:
- 4 oz grilled chicken sliced
- 1/3 cup mixed berries, sliced strawberries & blueberries
- 1/4 cup crumbled Feta
- 2 tbsp Toasted Almonds
- 2 cup baby spinach
Serve with 2 oz poppy seed dressing
Dressing Instructions:
- Add 1.25 cup sliced yellow onion, puree in Cuisinart with 3/4 cup sugar.
Then add:
- ½ cup sour cream
- ½ cup mayonnaise
- 1 tbsp poppy seeds
- 1 tbsp Dijon mustard
- 1 cup red wine vinegar
- 2 cups canola or salad oil
