Northbridge Recipe – Garlic Shrimp Scampi

Laurelwood at The Pinehills Culinary Director, Suzie Furguson, shares one of her favorite dishes to prepare for residents, Garlic Shrimp Scampi. This flavorful, classic recipe highlights fresh ingredients and simple techniques, bringing bold, satisfying flavors to the table.

Ingredients:
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 4-5 cloves of large garlic – minced
  • 1 ¼ pound large shrimp
  • 1 pinch of salt to taste
  • 1 pinch of pepper to taste
  • ¼ cup of dry white wine
  • ½ teaspoon red pepper flakes
  • 2 tablespoons of lemon juice
  • ¼ cup fresh parsley – chopped
Instructions:
  1. Heat the olive oil in a large skillet.
  2. Add garlics and sauté until fragrant, for about I minute.
  3. Add the shrimp and season with salt and pepper to taste. Sauté for 1-2 minutes or until the shrimp turns pink.
  4. Add the wine and red pepper flakes and bring to a simmer for 1-2 minutes or until wine reduces by about half and the shrimp is cooked through (don’t over cook your shrimp)
  5. Stir in the butter, lemon juice and parsley and take off the heat immediately.
  6. Serve over rice or pasta with garlic bread.
