Culinary Director Spotlight – Michael Solazzo

Culinary Director: Michael Solazzo
Community: The Landing at Saco Bay
What first made you interested in working in Senior Living?
I have been in the hospitality industry for over twenty years. While working in restaurants and catering, I found that working in everyday retail is not as rewarding as working with folks that need help. My goal was to find a position that works with people to bring a better quality of life and an opportunity to serve only the best.
How long have you been working in Senior Living and what was your first job in this field?
My job at The Landing at Saco Bay is my first position in the healthcare industry.
What is your favorite part about working in Senior Living?
Being able engage with residents and put a smile on their face while also providing delicious and healthy food.
What is one thing you wish everyone knew about being a Culinary Director?
At the end of the day, we are just cooks cut from the same cloth. Keeping hot food hot, and cold food cold, and serving it in a timely fashion has always been what I
preached to my staff and to other associates.
What is one piece of advice you would share with someone thinking of starting a career in Senior Living?
If you are not compassionate and are looking for just a paycheck, then this is not the job you are seeking
What keeps you invested in the field?
The everyday folks that I work with along with a management team that truly cares about our residents and our interactions with the community at large.
What is your favorite part about your job?
Developing menus along with the continued development of our team and the challenges that every day can bring.
What is the best part about working at The Landing at Saco Bay or at Northbridge?
I have worked for many companies in my time as a chef and this company outshines most when it comes to getting the tools that associates need to get the job
done. Seeing upper management come through regularly is a breath of fresh air. It’s rare to find a company that is this involved with operating facilities and doesn’t pass the buck when things go south.
What is your favorite meal to prepare for the residents?
Meatball Marinara: Meatballs have basic ingredients such as garlic, fresh herbs, egg, bread crumb, and parmesan but the most important part is having a meat mixture of both pork sausage and ground beef. Your marinara should also feature basic ingredients – sauteed garlic, chopped fresh basil, salt and pepper to taste, and tomatoes, the tomatoes should do most of the talking. Finish it all with a healthy dusting of Parmesan cheese. Serve with spaghetti or some nice cheese raviolis.
